Watch Ryan from the MakerBus shows a fun way to play with your food in this tutorial video. Sodium citrate allows you to turn nearly any cheese into an amazing melty, delicious, homemade nacho cheese – well worth a try!

The basic recipe is as follows:
– 1/3 cup water
– 1/2 tsp Sodium Citrate
– 2-3 cups cheese (of your choice)

Mix water and Sodium Citrate in a small pot and bring to a simmer. Once it reaches a simmer, add small handfuls of cheese, stirring until you reach your desired consistency.
